ONLYCOCOACHOCOLATE

Among the educational and cultural initiatives that the Agency “Colline Astigiane” promotes for students as deepening on specific topies, it will take place for two days:

Onlycocoachocolate – Solocacaocioccolato

On 10th and 11th March, with the valuable collaboration of the head-chef, pastry chef and chocolatier Valerio Angelino C. of Biella, owner of “Restaurant that there is no”, in the centre of Asti – via Asinari 5 – three cultural interventions will be implemented.

  • In the Monday morning, March 10th, the pastry chef and chocolatier will meet the cooking and bar students of the third year and he will tell about the history and origin of cocoa, from the fruit to the cup and the production chain
  • On Monday, March 10th from 4:30 to 6:30 pm, always in the school of Asti, all cooking enthusiast people can participate at a public meeting with the pastry chef and chocolatier Valerio Angelino C.
    He will explain about cultural notions of the history and origin of cocoa, from the fruit to the cup and the production chain.
    The Chef will show some culinary vintage instruments and antiques of his personal collection and exposed in his “Little Museum of cooking and pastry things” in the medieval village Ricetto di Candelo (Bi).
    After it will take place the degustation of some dishes.
  • On Tuesday evening, March 11th, it will take place the Didactic Restaurant with the classes of third year, with a menu devoted entirely to “Food of the Gods”.

Mascarpa ewe mountain cheese, tapenade dark chocolate with corn chips and toasted crostini with herbs

Aubergine and chocolate timbale with a light pesto

Semolina little dumplings, chestnuts and chocolate over potato fondue and grana cheese with ginger.

Chicken legs with Mexican sauce”Puebla” and potatoes au gratin with cocoa butter.
